All the basic Bhutanese dishes are presented, But I have been there 8 time and cooked with families, so I am used to the heat! No discussion of chilies versus Ema is presented. Also the selection of cheeses is not really discussed. I don't think Bhutanese in the US use Gouda as a substitute!
