    Arrived fast and easy. It is dried and fermented bamboo shoots, a very popular topping for Ramen soups in Japan. the way I hydrate is in simmering water for a total of 24 hrs, changing the water 2 times: after 4 hrs, then again after 4 hrs, then let simmer for another 16 hrs, for a total of 24 hrs of cooking. strain and season to your liking. the taste is very unique, slightly sour/ferment-y, with chewy texure.
